Growing up we never had a lot of money and there were 4 kids in our family. My mom knew how to stretch her dollar back in the day and one of the things we had most often was Fried Rice. Now you are probably thinking Fried Rice like what we get from a Chinese restaurant, right? Well that is where the Brummitt way comes in. She made it the best way she knew how and we often just had Fried Rice for supper. It is super simple to make and it only has 3 main ingredients. Yes you read that right, 3 main ingredients and then a little bit of seasoning. So when you are in the mood for something filling and different try Fried Rice the Brummitt way.
Brown your sausage (1 roll) in a big skillet, pour in your water, when it is boiling add your rice (2 cups). Cook until rice is fluffy, add a little salt, pepper, onion salt, and garlic powder and finishing cooking. Then right before you serve it you stir in an egg that has been beaten just to help hold it together. We topped ours with Soy Sauce and it was quick easy meal for the family of 6 to eat.
We always had extra left over for the next day’s lunches or made more depending on who all showed up for supper. I hope you enjoy this quick and easy recipe, Fried Rice the Brummitt way.
